That time I actually cooked and ate cauliflower..

I think the only time I have ever eaten cauliflower is at restaurants or covered in some sort of creamy sauce. I love vegetables, but I just always thought of cauliflower as broccoli's boring cousin.

So it took me a while to get on the cauliflower-instead-of-everything bandwagon, but I was getting restless with my meals lately and decided to take the plunge.

I basically followed Rose's recipe here, except no chilies or prawns. Prawns are too expensive here and aren't as good as they are at home, so I just decided to omit them completely. Also, I'm not a spice (as in hot) lover, so no chilies for me. I added peas, carrots, celery, bok choy and chicken.

When I got home from swinging by the grocery after work, I asked hubby for help - he could do the shredding of the cauliflower. When he realised we weren't actually having rice, but cauliflower masquerading as rice, he was less than pleased. I begged him to keep an open mind and promised it would taste good - what did I know, I had never eaten it before - I trusted Rose though.

I don't have any pretty pictures for you, because this isn't a foodie blog, but I just had to share that it turned out wonderfully and now I want to try the pizza version. Oh, and hubby basically licked the bowl clean and took it for lunch today.

I also thought myself a bit of a culinary genius after making this. I posted on facebook and was met with about 27 replies of people who had done it, and cooked other things like pizza and mashed potatoes using cauliflower. So I guess I'm not as much of a culinary genius as I thought.
